Physicochemical Properties of Egg-Box-Mediated Hydrogels with Transiently Decreased pH Employing Carbonated Water
内容
Soda, i.e., carbonated water, facilitates the formation of the egg-box-mediated structure with low-methoxy pectin and CaCO3, resulting in the acquisition of a hydrogel having a highly ordered hexagonal structure while preserving biocompatibility. This methodology can convert the garbage of apple and citrus peels to functional materials, thus contributing to the achievement of sustainable development goals.
